Passitivo is produced using only the best hand-picked Primitivo grapes from low-yeilding vineyards in Puglia, in Southern Italy. APortion of thers grapes follow a rare winemaking technique called Appassimento, whereby the grapes are dried for a breif period of time concentrate their aromas and rich fruit flavors. The resultant wine is intense ruby-red in colour, with a complex bouquet reminescent of Cherries, raspBerries and redCurrants. The partial Oak-aging adds a pleasant roasted and spicy aroma and makes this full-bodied and supple wine , perfect with roasted red meats and mature cheeses. The araoma of this wine is very spicy and generous with hints of Cherries, Rasins, Dark Berries and other delicious dried fruits. The taste of the wine is full-bodied, dark and fruity with a mild soft aftertaste.
